Here is a recipe to get you started. 

Well Naturally Sugar Free Dark Chocolate Mousse
Ingredients:
  • 200g pack of Well Naturally Sugar Free Dark Chocolate Melts
  • 2 cans coconut cream (chilled for a few hours in the fridge)
  • 1 teaspoon vanilla extract
  • 1 teaspoon Natvia (optional)
  • Fresh berries, coconut flakes and grated chocolate to serve
To do:
  • Melt Well Naturally Sugar Free Dark Chocolate Melts as per instructions on pack
  • Open the cans of coconut cream and scoop out the thickened cream from the top (this should have separated in the fridge), leaving the liquid portion aside
  • With an electric whisk, beat the coconut cream for 2-3 minutes until it thickens to the same consistency of regular whipped cream
  • Add the vanilla (and optional Natvia), followed by the melted chocolate and whisk together until thoroughly combined
  • Spoon into glasses or small ramekins and place in the fridge to set
  • Sprinkle with flaked coconut, berries and grated Well Naturally Sugar Free Dark Chocolate to serve

Traditional method

Place the Sugar Free Dark Chocolate Melts into a microwave proof bowl. Heat on medium power for 1 minute and stir well with a metal spoon. Repeat the heating and stirring process until the chocolate is completely melted and the desired texture is achieved. Please note that microwave ovens vary in power.

Important tips when working with real chocolate

  • The most important tip is to never allow any water, moisture or steam to come in contact with melted chocolate. If this occurs the chocolate will start to quickly firm up and solidify or become very granular
  • When melting chocolate always use clean and dry utensils. Metal spoons or stirrers are preferable to wood (wooden spoons or stirrers may contain absorbed water which is a big no-no for melted chocolate).
  • Chocolate will easily burn or scorch when heated directly over a stovetop so never melt chocolate in this way. Always use the traditional bowl over simmering water or microwave method as described above to melt chocolate.
